California Grilled Hen Avocado and Mango Salad
Tropical fruits like mangoes and avocados are my favourite fruits. Paired collectively on this salad with grilled hen, it couldn’t be extra scrumptious! Extra recipes I really like with mango are this Pork Tenderloin with Mango Salsa, these Mango Coconut Ice Pops and this Mango Coconut Chia Pudding.
After I was a child, I spent many summers at my cousin’s home in Puerto Rico and I keep in mind all of the mangoes falling off her mango bushes, so many it was arduous to maintain up with them. Again then mangoes weren’t as fashionable right here within the states, however fortunately right this moment you’ll find them in each grocery store.
This salad screams California, which is the place it was impressed from! For this salad I used pink butter lettuce, however you should use any child lettuce, particularly house grown if in case you have any in your backyard!
For the dressing I saved it actual easy, additional virgin olive oil and white balsamic vinegar which is of course candy and ideal on this salad.
